Ingredients

1 tablespoonextra virgin olive oil
1red pepper
sliced into strips
2spring onions
scallions, roughly chopped
235gcan cannellini beans
rinsed and drained
1 teaspoonmild chilli powder
1 teaspoonsmoked paprika
½ teaspoonground cumin
1juice of lemon
fresh coriander
cilantro, plus extra to garnish
1red chilli
deseeded and finely sliced
1avocado
large, finely sliced
4tortillas
Instructions
Step 1
In a large frying pan or wok, heat the oil over a high heat.
Step 2
Add the red pepper and spring onions to the pan and cook for 1-2 minutes.
Step 3
Add the cannellini beans to the pan along with the chilli powder, smoked paprika, and cumin.
Step 4
Stir frequently, crushing the beans slightly, cooking for a further 2 minutes.
Step 5
Remove the pan from the heat and stir through the lime juice, coriander, and red chilli.
Step 6
Lay out the wraps and load in the hot filling.
Step 7
Scatter mix with coriander and avocado slices to garnish.
Step 8
Fold in until secure.
