Short Ribs Guinness Gravy (Sous Vide)
Please find my Guinness glaze recipe from Whisk. (https://whi.sk/e4FLC).
I make this glaze, put into a jar, and keep it in the fridge. I can use it for chicken, chicken wings, burgers, and steak! Guinness glaze contains cayenne pepper and red chili pepper, so it's spicy. The glaze recipe makes about 1 cup, and I used 1/3 cup glaze for this Guinness gravy. Sous vide cook short ribs are pink inside, so moist and tender. Don't forget mashed potatoes! Instructions
Step 1
Preheat sous vide to 135F.
Step 2
Put the short ribs into a freezer-safe ziplock bag, zip, air out, and cook for 48 hours.
Step 3
When the ribs are ready, remove them from the bag. Save the cooking liquid for later. Place them on the paper towel, and season with salt and pepper. Let them rest for 10 minutes.
Step 4
Heat cast-iron skillet over medium-high heat. When the skillet is hot, add butter. Place the short ribs, cook for 1 minute, flip, cook for 1 minute, transfer them to a plate.
Step 5
Combine beef broth, Guinness glaze (please see my Whisk recipe https://whi.sk/e4FLC), fat from the rib cooking liquid in a medium saucepan, and shimmer.
Step 6
Sprinkle flour little by little, and make gravy.
Step 7
Place ribs on the plates, and pour gravy.
