Instructions
Step 1
Put the wine on souse pan to reduce and take out the alcohol. With Sous vide you have to take the alcohol out otherwise it will be bitter.
Step 2
Cut your belly for size 2”x2” up to 3”x3” what ever works from your belly pork.
I cut my to 24 units
Step 3
Put every 2 cut belly to your small zip bags or vacuum bags you have.
Step 4
Orgenized your each bag to larger bag that it will be plat take the air out. This double bag proses sis for safety not to lose or lick.
Step 5
Sous vide under the water for 36 hours on 150 F.
