Chocolate Love Cookies

These chewy and slightly nutty cookies come together in no time. We love to decorate ours with a drizzle of melted chocolate that sets beautifully as the seconds pass, and a generous sprinkle of edible dried rose petals for a special Valentine’s Day treat. You could use dried goji berries or chopped nuts if you can’t find any edible flower petals.

Ingredients

For the cookies
100gcoconut sugar
100gbuckwheat flour
100gground almonds
2 tablespoonscocoa powder
½ teaspoonbaking powder
¼ teaspoonflaky sea salt
75gcoconut oil
melted and cooled
2 tablespoonssmooth almond butter
2 tablespoonsoat milk
1 teaspoonpure vanilla extract
50gdark chocolate
70 - 90 %, chopped into chunks

Instructions
Step 1
Preheat oven to 180°C / 160°C fan / 350°F. Line a baking tray with parchment paper.
Step 2
Mix together all the ingredients for the cookies in a large bowl until well combined and a smooth dough forms. Scoop the dough using a tablespoon measure, roll into balls, and place onto the parchment-lined baking tray. Gently flatten with your hand as the cookies won’t spread out during baking, so we do this for a nice cookie shape.
Step 3
Bake, until darkened and slightly cracked around the edges, 12-13 minutes. Remove from the oven and set the baking tray on a wire rack to cool.
Step 4
To decorate your cookies, melt the chocolate in a small saucepan over low heat. Alternatively, place chocolate in a microwave-safe bowl and microwave in 15-second intervals, stirring between each interval, until melted and smooth. Use a spoon to drizzle the chocolate over the cookies and sprinkle with the rose petals while the chocolate is still wet. Allow the chocolate to set before eating.
