Step 1
Line a muffin tray with 12 muffin liners and preheat the oven to 150C/300F (fan).

In a bowl mix almond flour with melted butter, icing sugar and a pinch of salt.

Add 2 tablespoons of mixture in each one of your muffin liners, flatten with a spoon and bake for 8 mins.

In the meantime, in a bowl mix cream cheese with sugar, cream, vanilla and lemon juice for a minute or until smooth, then incorporate your eggs and mix for one more minute.

Pour your mixture on top of your baked base, lower the oven temperature to 140C/285F and bake for 20 mins.

Now it’s very important you let your cheesecakes completely cool down then let them rest in the oven for AT LEAST 6 hours, even better overnight! Please don’t skip this step, it’s very important!
Step 7
Decorate your cheesecakes with whipped cream, strawberries and, if you find them, little meringues. Buon appetito!
