Arugula Salad with Steak Tips and Gorgonzola

Instructions
Step 1
Prep Steak. Trim steak and cut into 3-inch pieces. Pat dry and season with salt and pepper.
Step 2
Cook Steak. Heat 2 Tbs oil in 12-inch skillet until just smoking. Cook steak until we’ll browned on all sides and meat registers 125 degrees, 8-10 min. Transfer to plate, tent with aluminum foil, and let rest.
Step 3
Make dressing. While steak rests, mince shallot and garlic and transfer to large bowl. Add vinegar, mustard, honey, 1/4 tsp salt, 1/4 tsp pepper. Whisking constantly, slowly drizzle in remaining 1/4 cup oil until incorporated.
Step 4
Crumble Gorgonzola into small pieces (1.5 cups).
Step 5
Make salad. Add arugula and crumbled Gorgonzola to vinaigrette and toss to combine. Season with salt and pepper to taste.
Step 6
Slice steak and finish salad. Cut steak against grain into 1/4 inch thick slices. Divide salad among individual serving dishes and top with sliced steak. Serve.
