Instructions
Step 1
In separate bowl mix meat, eggs and stuffing until well blended without overworking the meat
Step 2
Put 1 c water in bottom of instapot. Place the meat on a large piece of aluminum foil and fold the edges up to make a secure nest for the meatloaf to rest in. Place meat on wire rack and put both in instapot.
Step 3
Put on lid, lock, and set pressure value to sealing. Pressure cook on high for 25 minutes.
Step 4
While it is cooking mix up sauce. When pressure is releasing warm up the sauce (about 30 seconds) and place on top.
Step 5
When finished, let it naturally release for 10 minutes then remove from instapot and foil and put topping on.
To cook while cooking potatoes
Step 6
Add the quartered potatoes, water, and salt to the bottom under meat instead of just water.
Step 7
3 pounds Yukon Gold Potatoes , quartered ▢1 cup water ▢1/4 teaspoon salt ▢1/4 cup milk ▢1/4 cup sour cream ▢3 Tablespoons butter ▢1 teaspoon bouillon paste (I love 'Better than Bouillon)
Step 8
Add the milk, sour cream, butter, bouillon paste, and salt and pepper to the bottom of the instant pot with the mashed potatoes. Mash to combine (but don't over-mash the potatoes). Taste and adjust seasonings, as needed.
