1 bagSweet Potato Biscuit Mix
1 teaspooncinnamon
½ teaspoonnutmeg
½ teaspoonsalt
½ cupvegetable oil
¼ cupmilk
2eggs
large
½ cupbrown sugar
1 cupsweet potatoes
mashed
1 tspvanilla extract
For the Maple Glaze
Instructions
Step 1
Grease 2 donut pans.
Step 2
In a large bowl, add Miss Lena’s sweet potato biscuit mix and add cinnamon, nutmeg and salt and whisk well until fully combined.
Step 3
In a medium bowl, whisk together the vegetable oil, brown sugar, eggs, mashed sweet potatoes, milk, and vanilla extract.
Step 4
Add the wet ingredients to the dry ingredients and stir together until just combined.
Step 5
Using a gallon size ziploc bag, add the batter to the bag. Cut the corner of the bag to create a piping bag. Spray donut pan with cooking spray. Pipe the batter into greased donut molds.
Step 6
Bake at 350F for 15 minutes or until the tops spring back when lightly pressed. Remove from the mold and place on cooling rack. Once the donuts are cooled, dipped into maple glaze and sprinkled with chopped bacon.
Directions to Make the Maple Glaze
Step 7
In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted powdered sugar
