Instructions

Step 1
1. Put a pan on the stove over medium heat. Put the bacon in the pan and cook, flipping about halfway through, until fully cooked and crispy (~10 minutes). Remove the bacon from the pan but leave the bacon fat.

2. While the bacon cooks, place the chicken on a piece of parchment paper and then place another piece of parchment paper on top of the chicken. Take the flat side of a meat tenderizer and pound the chicken until it is ~1 in thick all around. Season the chicken generously with the ranch seasoning, ~1 tsp on each side.

3. Place the seasoned chicken in the pan of hot bacon fat and cook, over medium heat, ~5 minutes per side until the chicken is fully cooked. While the chicken cooks, slice the bell pepper and cucumber.
Step 4
4. Assemble the salad by placing the lettuce in a large bowl with the bell pepper and cucumber. Add the Italian dressing and toss to combine. While tossing, sprinkle in ~1 more tsp of the ranch seasoning. Transfer the mixture to the serving bowls and place crumbled bacon and sliced chicken over the top.
