Ingredients
8 servings
Ice cream filling
½ cupcashews
or double amount of coconut milk
1can coconut milk
only use solid part
2 Tbspmaple syrup
1 tspvanilla extract
½ cupsoy milk
Caramel layer
Chocolate coating
Instructions
Step 1
Blend all ingredients for the filling and leave to set in ice cream trays.
Step 2
In the meantime you can blend the ingredients for the caramel layer.
Step 3
Spread caramel over the ice-cream and put it back in the freezer.
Step 4
Melt down some vegan (dark) chocolate, optionally add some chopped almonds or other nuts and dip your ice-cream into the chocolate.
Step 5
Enjoy immediately once the chocolate is solid again or store in the freezer for whenever you are craving some scrumptious vegan ice cream!
