Instructions
Step 1
Mix flour, yeast, water, salt in stand mixer #2 speed for 5 min
Step 2
Add oil to dough mix #1 sipped for 2 min
Step 3
Rest dough in refrigerator for 30 min
Step 4
Break into 250-280 g balls, place in dedicated containers and return to fridge for at least 3 hrs (no more than 24)
Step 5
Pre-heat oven 700 degrees
Step 6
Dust work area with flour
Step 7
Roll out dough place into oven for 2-3 min
Step 8
Remove from oven, add toppings and cook until cheese begins to melt
