Instructions

Step 1
1. Make a dough by mixing together the flour, salt, yeast and water.
Step 2
2. Rub the top with some olive oil and place in the fridge for 12 hours

Next day

Step 3
1. Line a baking tray/ pan. The size of the tray will determine the height of the focaccia (bigger = flatter)
Step 4
2. Lightly deflate the dough and place onto a lightly oiled baking tray.
Step 5
3. Cover with cling film and let is rest for 2-3 hours (depending on temperature, preferably warm-ish)
Step 6
4. The dough should now have covered most of the base of your baking try, sprinkle some oil on it and use your fingers to create dimpels. Use this technique to fully spread out the dough as well, but don’t stretch or deflate it at this point!
Step 7
5. Pre-heat the oven to 180degrees C and sprinkle some salt over your dough.
Step 8
6. Bake for 25-30 min or until the bottom is golden brown and sounds hollow when tapping on it.
Step 9
7. Let it cool completely if wanting to use for a sandwich.
