Instructions

Step 1
Bring 8 C of water to a boil in a large pot.
Step 2
Add in noodles and cook until Al dente.
Step 3
Once the noodles are cooked, pour into a strainer to remove all the water. Leave the noodles in the strainer for now.
Step 4
Add butter to the pot and melt over medium heat. Add in flour and whisk until you form a thick paste. Cook for 3 minutes while stirring constantly.

Slowly add in milk while continuing to whisk.
Step 6
Add in cheese in 3 parts, letting each addition melt fully before adding more.
Step 7
Add in noodles and seasonings. Mix well and adjust seasonings if desired.
Step 8
Pour the noodles into a large Tupperware and place in the fridge for at least 1 hour, ideally overnight.
Step 9
Preheat your deep fryer or Dutch oven with oil to 350 degrees.
Step 10
Pour the flour into the noodle container and mix well. It will look weird, trust me it will make this so much easier.
Step 11
In 2 separate bowls, prepare your panko and eggs. Beat the eggs slightly.
Step 12
Using a cookie scoop or your hands, portion out golf ball sized scoops of noodles.
Step 13
Drop the balls into the egg and then the panko making sure it is fully covered.
Step 14
Fry for about 4 minutes, this will vary depending on the size of the ball. You’re looking for the outside to be a dark golden brown.
Step 15
Top with chives.
