Step 1
Prepare the Cheese Blend: In a bowl, mix together the sharp cheddar, Swiss, mozzarella, and optionally, pepper jack cheese. Set aside.

Make the Batter: In a large bowl, whisk the eggs. Gradually add the flour while stirring, until a thick, malleable dough forms. The dough should be sticky enough to hold together but not too wet or runny. Add the rosemary, thyme, basil, and sage to the dough and season with salt and pepper to taste. Mix well.

Form the Balls: Take a small amount of dough (about 1 tablespoon-2 tablespoons), roll it into a ball, and flatten it slightly with your hands. Place about 1 teaspoon of the cheese blend in the center. Carefully wrap the dough around the cheese, forming it into a ball. Make sure the edges are sealed well to prevent the cheese from leaking out during frying. Repeat with the remaining dough and cheese.

Fry the Cheese Balls: Heat about 1-2 inches of olive oil in a deep skillet or pan(or stainless steel pot) over medium heat. Once the oil is hot, carefully add the cheese balls, a few at a time. Fry for about 2-4 minutes, turning occasionally until they are golden brown on all sides. Remove the balls from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
