Savory Gruyère Bread With Ham

The ham & cheese-filled loaf is the savory quick bread you didn't know you needed. We love it with Gruyère, but sharp cheddar works just as well.

Instructions

Preheat oven to 350º

Step 1
Butter & flour metal 9”×5” loaf pan; set it aside.
Step 2
In lg. bowl, whisk together flour, salt, baking powder, & baking soda. Stir in chopped ham, scallions, thyme, & 1¾ cups cheese (reserving rest for topping). In separate bowl, whisk together melted butter, eggs, & buttermilk. Add wet mixture to flour mixture, stirring to combine. (Batter will be thick.)
Step 3
Transfer the batter to the prepared loaf pan & spread out evenly, smoothing top; sprinkle with remaining cheese.
Step 4
Bake (45-55 min.) until top springs back when lightly pressed and toothpick comes out with some moist crumbs attached. Transfer pan to wire rack & cool (10 min.); remove bread from pan & cool completely on wire rack.
Step 5
Bake loaf up to 3 days in advance. Store it, well wrapped, in refrigerator & bring it to room temperature before serving.
Step 6
FREEZING: Freeze it for up to 2 mo. After freezing, this is best sliced, toasted, & warm; spread with butter.
