Instructions

Step 1
Heat in a large saucepan over medium-low heat:
pancettapancetta1 ounce
olive oilolive oil3 tablespoons

Cook, stirring, until the pancetta or bacon releases its fat but is not browned, about 8 minutes.
Step 3
Increase the heat to medium and add:

Step 4
Cook, stirring, until the onions are translucent, about 5 minutes.
Step 5
Add and brown:
beef chuckbeef chuck500g
Step 6
Stir in:
dry white winedry white wine⅔ cup
tomato pastetomato paste2 tablespoons
chicken stockchicken stock¾ cup
Step 7
Reduce the heat to low and simmer gently, partially covered, skimming off the fat occasionally. From time to time as the sauce simmers, add 2 tablespoons at a time:
whole milkwhole milk1 ½ cups
Step 8
Cook until the sauce is the consistency of thick soup, about 2 hours. Remove from the heat and let cool.
