Original recipe is for a meatball soup, but I simplified by browning the meat, and combining some steps and ingredients.

Ingredients

For the ground meat:

2 poundsground turkey

1onion
small, diced

3cloves garlic
minced

½ teaspoonsalt

¼ teaspoonpepper

2 teaspoonsitalian seasoning

2 tablespoonsdried parsley
For the soup:

1 tablespoonextra virgin olive oil

1onion
small, diced

2cloves garlic
minced

2stalks celery
chopped

32 ozcan diced tomatoes

3 tablespoonstomato paste

2 teaspoonsdried basil

2 teaspoonsdried oregano

2 teaspoonsdried thyme

2 teaspoonsrubbed sage

½ teaspoonred pepper flakes

48 ozlow sodium chicken broth

1zucchini
medium, chopped

1bell pepper
chopped

2 teaspoonsbalsamic vinegar

1 cupfrozen spinach

⅓ cupheavy cream

salt
to taste

pepper
to taste
Instructions
Step 1
Brown the meat and seasonings in a large pan over medium-high heat; when the meat is almost browned, add the onion and garlic, allowing to sauté until tender and meat is fully cooked. Remove from heat and set aside.
Step 2
In a large pot, heat the oil over medium heat. Add the onion, garlic and celery, and sautéed about 5 minutes. Add the tomatoes, tomato paste, chicken stock, basil, oregano, thyme and sage. Raise heat to medium-high and bring to a boil.
Step 3
Once the soup boils, reduce heat to medium-low and simmer 20-25 minutes. Add the balsamic vinegar, spinach and heavy cream, and allow to heat through (3-5 minutes).
Step 4
Adjust seasonings to taste, and serve!
