Instructions
Step 1
1.Preheat oven to 400 degrees, and put 8-10 paper liners in a muffin tin.
Make lemon sugar
Step 2
Zest the lemon.
As the sugar and rub together until the zest flavors and scents the sugar.
Make batter
Step 3
1. Dry ingredients: whisk flour, lemon sugar, baking powder and salt in a large bowl.
Step 4
2. In a Pyrex measuring cup, add the oil and 1 egg. Then as enough milk ( or buttermilk) to reach the 1 cup line. Add lemon juice and vanilla. Then Whisk together in a smaller bowl.
Step 5
3. As the liquid ingredients to the dry and combine with a fork, being careful not to overmix. Fold in blueberries.
Scoop and bake
Step 6
1. Scoop the batter into the muffin cups. Sprinkle some sugar on top of each muffin.
Step 7
2. Bake 15-20 min at 490 until toothpick comes out with crumbs, not wet. Transfer to cooking rack.
