Ingredients

250gmince
1onion
1 Tbspolive oil
1 Tbspghee
2 cupsrice
1 ½ tspsalt
1 tspcardamom
0.5cinnamon
½ tsppaprika
½ tspsaffron
To Serve
Instructions
Step 1
Heat the oil & ghee in a saucepan.
Step 2
Sauté diced onion in the ghee/oil until softened.
Step 3
Add mince to & brown
Step 4
Seperately soak a pinch of saffron in 3 cups warm water & set aside.
Step 5
Add your rice and all the spices. Add the saffron plus the water. Bring it to the boil. Reduce heat and leave to simmer for 11 min with the lid on.
Step 6
While rice is cooking, heat a tablespoon of ghee in a fry pan. Add the pine nuts & almonds & toast until just golden. Remove from pan & set aside.
Step 7
Once rice is cooked turn off the heat and leave the lid on and allow the steam to finish cooking your rice for another 10 minutes.
Step 8
Serve the rice topped with the toasted nuts, freshly chopped parsley & some pomegranate seeds.
