Chicken Chilifry and Orzo Rice Pilaf

Chicken chilifry is a sautéed meat and veggie simmered in a tomato sauce and I love serving it with a Orzo Rice Pilaf. It’s Quick easy and delicious, a meal for the entire family on the table in no time.

Instructions

Step 1
1. Make the chilifry— put a pan on medium to high heat. Add in olive oil, sliced onion and cook the onions for a couple of minutes. Next add in the diced chicken and cook for about 7 minutes.

2. Next add in the garlic, bell pepper and cook for a couple of minutes. Add in the sliced tomatoes and the seasonings, give it a toss.
Step 3
3. Add in the tomato sauce and water, give it a good mix, cover the pan and simmer on medium to low heat for about 15 minutes.
Step 4
4. After the 15 minutes turn the heat off, add in the chopped parsley and done.
Step 5
5. Cook the Rice— wash the rice until the water runs clear and soak the rice in water for about 20 minutes, Then strain.
Step 6
6. Put a pan on medium to high heat, add in the oil, orzo and toast the orzo until golden. Next add in the rice, salt and mix.
Step 7
7. Pour in the hot water and give it a quick stir, cover the pon, and wait for the water to reduce down. Once the water reduces down, turn down the heat to really low and let the rice cook for another 15 to 20 minutes until fluffy.
Step 8
8. Once everything is cooked and done, Serve, garnish with more parsley and enjoy!
