One Pot Chickpeas and Veggies

Instructions

Step 1
In large skillet, heat oil over medium heat. Add butternut squash and saute. Cover for about 5 minutes until tender.
Step 2
Add drained chickpeas and spices and cook for a few minutes.
Step 3
Turn heat to medium low. Add remaining ingredients. Cover and cook 15 minutes.
