Cowboy caviar salad
The perfect way to eat veggies during the summer!
Cowboy (Texas) Caviar is becoming a viral trend on TikTok and I had to try it out myself to see what the hype was about. Not only is it super easy to make (once you chop all the veggies), but it is SO versatile. You can have a larger portion for lunch, have a smaller portion as a snack between meals, and become the most popular person at the party by bringing to a potluck for many to share.

- Are looking to get a wider variety of veggies in their diet
- Are trying to increase fiber intake (all these veggies, beans, and fruits are high in fiber)
- Want to find more ways to snack on veggies, but find raw veggies boring by themselves (me lol)
I’ve mentioned this device in my other video, but I highly recommend buying a veggie chopper (linked in the Amazon storefront) for recipes like this! As much as I love working on my knife skills, using the veggie chopper saved me A LOT of prep.
For those who have been eating this their whole lives, consider yourself lucky because I truly wish I knew about this sooner!
Recipe:
- Dice 1 red bell pepper, 1 yellow bellow pepper, 1 orange bell pepper, 1/2 cup red onion, 3 Roma tomatoes, 1 jalapeño pepper (de-seeded), and 1 avocado.
- In a large bowl, mix together diced veggies, 15 oz can black beans (rinsed and drained), 15 oz can black-eyed peas (raised and drained), 11 oz canned corn (rinsed and drained), and 1/2 cup cilantro, 1/2 cup olive oil, 1/4 cup apple cider vinegar, 2 tsp chili powder, 1 tsp sugar, 2-3 tbsp lime juice, salt, and pepper. Of note, I sometimes like to add cumin for more flavor.
- Enjoy with tortilla chips!
