Preheat 350
Step 2
Brisket in roasting pan. Combine salt, pepper & garlic. Rub on Brisket. Pile carrots, onion, celery & bay leafs on meat. Pour in tomato juice til about 3/4 way up meat. Cover with 2 sheets parchment paper then foil. 3 1/2 hours til tender. Remove meat. Place pan on 2 burners & boil over medium heat 30 minutes til thickens
