Ingredients

50gglass noodles
small
0.5carrot
julienned
0.25sweetheart cabbage
julienned
0.25red bell pepper
julienned
0.25yellow bell pepper
2garlic cloves
2spring onion
julienned
1 tspsoy sauce
1 tspOyster Sauce
1 tspsugar
1 Tbspfish sauce
1egg
ground pepper
to taste
1 cupvegetable cooking oil
0.5 packspring roll sheets
sweet chilli sauce
to serve
Instructions
Step 1
Soak glass noodles in a hot water for 10 minutes, drain, and cut the noodles into 4 parts.
Step 2
Add 2 tbsp cooking oil to a frying pan together with crushed garlic and stir well( fry on medium heat). Then add all vegetables and glass noodles. Add soy sauce, oyster sauce, fish sauce and sugar, stir well and add beaten egg, mix well and add spring onion. Season with ground pepper, turn the heat off and set it aside.
Step 3
Working with 1 spring roll sheet at a time, put it on a flat surface, add about 1tbsp of spring roll stuffing on 1/3 of the spring roll sheet and roll the sheet up, starting from the nearest side to you. Then fold both sides up. Roll your spring roll up and secure the and with a bit of water. Keep doing it until you finish the filling.
Step 4
Fry them on medium-high heat with 1 cup of cooking oil wok or pan for 5-6 minutes on each side.
Step 5
Serve with sweet chilli sauce and enjoy!
