Instructions
Step 1
1. Combine creams and sugar and whisk together until softly stiff.
Step 2
2. Refrigerate for 1 hour.
Step 3
3. Stir macaroons, half the ratafias and Marsala or sherry into chilled cream.
Step 4
4. Whisk egg whites to a stiff snow and fold into cream mixture.
Step 5
5. Turn mixture into a lightly oiled 1.25 litre (2¼pint) mould or large loaf tin. Freeze until firm.
Step 6
6. Turn Tortoni out of mould and sprinkle with remaining ratafia crumbs to coat.
Step 7
7. Decorate with melted chocolate drizzled over surface and serve immediately.
