Instructions
Step 1
Whisk the eggs, sugar, milk and cream over a bain-marie until it reaches around 75℃.
Step 2
Remove it from the heat and add the chocolate. Let it sit for 2 minutes then whisk until smooth. (An immersion blender will give you a slightly better result).
Step 3
Chill for 6 hours or overnight.
