Instructions
Step 1
1. Add salt to taste (around 1tbsp) to a pot of Greek yogurt / spreadable labneh
Step 2
2. Mix it up!

3. Pour it into a cheesecloth
Step 4
4. Tie up the cheesecloth, hang the cheesecloth with a bowl underneath for it to drain into and let it strain for 2-3 days until it reaches the desired consistency Note: after a day or two you may need to remove any discoloured edges of the labneh, empty the cheesecloth, wash it and pour the labneh back in to avoid it going bad around the edges

5. After a 2-3 days it should be solid enough to shape it into balls
Step 6
6. Use olive oil to prevent the labneh from sticking to your hands as you roll it up into balls, and pop it in a jar of olive oil
Step 7
Store in a cool dry place, this keeps well for 2-3 weeks
