A little something sweet with out kicking you out of ketosis! I've added an extra egg to help set up the cheesecakes from the original recipe.

Step 1
Pre-heat oven to 350 degrees. Mix ground almonds and butter together. Spoon almond mixture into greased muffin tins and press into bottom. Bake 5 mins
Step 2
Cream cream cheese and sugar together, add eggs, vanilla, lemon juice and salt until all combined.
Step 3
Using a cupcake scoop, divide batter among all baked almond crust. Bake for 15-20 mins or until set.
