If I had to summarize this cake in a few words: comfort, infinite sweetness, super unctuous.
Well let’s not lie to each other, an autumn without pumpkin spice cake it is not a true autumn. In this beginning of October I wanted to share this special recipe with you!

Instructions
Step 1
Start by cooking a pumpkin, or butternut in the oven for about 40 minutes at 200 degrees celsius.
Step 2
Once it’s cooked, set aside and let it cool. Then mix it until you obtain a soft puree, you can add a little bit of water if it’s too thick.
Step 3
Mix all dry ingredients together, and set aside.
Step 4
In another bowl, mix all wet ingredients together.
Step 5
Pour the liquid ingredients over the dry ingredients and mix gently.
Step 6
The goal is not to over mix, so that the cake is soft!
Step 7
Bake the cake in the oven at 180 degrees celsius for about 20 minutes. Set aside before unmolding.
Step 8
For the cream on top, I simply mixed the mascarpone cream with powdered sugar and a little vanilla!

You can adjust the texture with some milk, it should look like this 🤍

All that's left to do is spread the cream on top of the cake once it's cooled! You can also add some cinnamon on top to decorate.
