Instructions

Step 1
1. Preheat oven to 350 degrees and grease 8 wells of a standard muffin pan 2. In a large bowl, whisk together the coconut flour, protein powder, and salt 3. Using the larger holes on a box grater, grate the chilled butter into the dry mixture and stir to combine. Stir in the sour cream, whole eggs, and egg white until well combined. Let sit for a minute or so to thicken. 4. Using a large spoon, drop the mixture into the prepared wells of the muffin pan. Bake for 15-20 minutes or until risen and golden brown on the sides. Remove from the oven and let cool completely in the pan.
