Fried Cabbage with Sausage

Easy to fix for a weeknight dinner. Add mashed potatoes on the side, or rice if you prefer. Works as a simpler alternative for St. Patrick's Day without the corned beef.
You can substitute diced bacon instead of smoked sausage. Kielbasa or other kinds of sausage are also great!

Instructions
Step 1
Prepare the sausage (or bacon), garlic, onions, and cabbage by slicing and dicing as called for in the ingredient list.
Step 2
Heat oil in a dutch oven (or other large pan), then add sausage rounds and cook till browned.
Step 3
Add the onion and garlic and continue to cook a minute or two till aromatic.
Step 4
Add more oil to the pan, add the cabbage and stir well. Season with salt and pepper. Cover and cook the cabbage mixture, stirring occasionally, for about 10 minutes or so until the cabbage is cooked to desired doneness.
Step 5
Serve with mashed potatoes for an Irish vibe, or use rice if you prefer.
