Spiced Baked Salmon and Butterbean Mash

This is a delicious weeknight dinner dish which is popular with children and adults alike. It can be on the table in under 30 minutes. The butterbean mash makes a great alternative to potatoes.

Ingredients
4 servings

½ tablespoongarlic granules

½ tablespoonsweet smoked paprika

1 tspground coriander

½ tspdried oregano

¼ tspground ginger

¼ tspcayenne pepper
to taste

1 tspcaster sugar

¼ tspfreshly ground black pepper

1clementine
scrubbed, zest

2 tablespoonsolive oil

4salmon steaks
skin on
For the butterbean mash
2cans of butterbeans in water
drained and rinsed

2 tablespoonslow fat creme fraiche

1 tspcapers
drained and finely chopped

25gflat-leaf parsley
chopped
Instructions
Step 1
Preheat the oven to 200°C/Gas Mark 6.
Step 2
Using a pestle and mortar, crush the garlic granules a little, then mix in the paprika, ground coriander, dried oregano, ground ginger, cayenne pepper, sugar and black pepper. Mix in the clementine zest.
Step 3
Line a large baking tray with baking paper or foil and drizzle with 1 tbsp oil. Put the salmon on top, skin-side down, and rub the flesh with the spice mixture. Drizzle with the remaining 1 tbsp oil. Roast for 15-20 minutes, until the salmon is perfectly cooked through.
Step 4
While the salmon is cooking make the butterbean mash by mashing the butterbeans in a saucepan with the creme fraiche. Add the capers and parsley and check the seasoning. Heat on low to medium heat, stirring frequently, for 10-12 minutes until heated through.
Step 5
Serve the salmon with the mash. Broccoli, green beans or asparagus make great accompaniments.
