Strawberry Sauce (no added Sugars)

Sauce for strawberry ham. This recipe originally called for sugar. The carb count isn’t that bad with the sugar but I decided to try substituting stevia for the sweetness and pectin for a “thickener”. It turned out good but a difference is the consistency when it’s refrigerated it’s kind of like preserves. But heat it a bit and it’s sauce again. It can also be used for topping ice cream or plain cake with whipped cream. This makes around a pint of sauce and serving size is about a tablespoon. Also, I typically use whole frozen strawberries(it doesn’t seem to make a difference and speeds up the prep time).

Step 1
In a medium-sized saucepan, mix all the ingredients together.
Step 2
cook covered over low heat until thickened, about 60 minutes, stirring occasionally.
Step 3
If you wish, mash the berries with a spoon.
