Instructions
Step 1
Muffin tin sprayed with natural spray. You can use a 6 muffin pan, or a 12 cupcake pan.
Step 2
Preheat oven to 350 degrees

Stuff each cup to the top with a blend of the veggies. Whisk the eggs and pour over each cup just below the rim. Get creative with your ingredients! We sometimes drain pico de gallo and add the veggies!
Step 4
Bake for 18-20 minutes. In the last few minutes you can add a slice of tomato to each to roast.
Step 5
Let cool slightly on a wire rack and place in a refrigerator-safe container. Pop two in the microwave for 30 seconds to 1 minute, depending on your microwave for a simple breakfast or snack.
Step 6
Options: Use salsa in each or on topor use nitrate- free cold cuts and place on the bottom of each cup and then add veggies.

1 muffin pan egg cup is a serving, and 2 cupcake pan egg cups is a serving.
