Parsley Lemon Health Hitter
In cooking parsley's fragrant leaves are used to enliven and flavour a dish and there is certainly no exception when adding these pungent little leaves to a juice. This earthy little herb, with its bitter notes, really lifts the muted juices of cucumber, pear and apple, whilst leafy green spinach infuses beautifully with a splash of fresh lemon juice.

Instructions
Step 1
No need to peel anything, even the lemon rind should be left on for this recipe.
Step 2
If you are using a fast (centrifugal) juicer, start with the machine off and place the apple into the chute. Tightly pack the spinach and parsley in behind it, and sandwich with the lemon and pear. Turn on, push through and follow with the cucumber.
Step 3
If you are using a slow (masticating / cold press) juicer then you can juice in any order, ending with the cucumber.
Step 4
All you need to do now is pour over ice and enjoy.
