Instructions

Step 1
Preheat oven to 425*F. Season chicken with thyme, salt, and pepper. In a 10inch skillet, heat 2 tbs oil over medium-high heat. Cook chicken pieces two at a time for 7-9 minutes or until 165*F, turn once halfway through.
Step 2
Meanwhile, toss squash and 1 tbs oil, salt, and pepper together in a shallow baking pan. Arrange in an even layer and roast 10-12 minutes or until squash is just tender and starting to brown.
Step 3
Transfer chicken to a serving platter. Add cream and dijon to the skillet, bring to a boil, then reduce to a simmer. Simmer uncovered for 1-2 minutes or until slightly thickened, whacking constantly. Serve over chicken and squash.
