Instructions
Step 1
Preheat oven to 180 degrees fan Line a 8x10 inch baking tray with butter and parchment paper
Step 2
In a heatproof bowl melt butter in the microwave for approx. 30 seconds. Once melted add in 100g dark chocolate. Melt for another 30 seconds and stir. Give additional blasts in the microwave until fully melted and smooth. Set aside to cool.
Step 3
In a large mixing bowl combine castor sugar, dark brown sugar & veg oil. Mix. Add one egg at a time while whisking with an electric whisk. Add vanilla extract.
Step 4
In a medium mixing bowl sieve flour, cocoa & salt together.
Step 5
Add wet ingredients together (melted chocolate & better) to the sugar & egg mixture.
Step 6
Combine dry ingredients with the wet ingredients and fold until fully incorporated. Do not over-mix.
Step 7
Chop 100g milk & 100g white chocolate into chunks. Add chunks into mixture. Mix until fully incorporated.
Step 8
Pour batter into prepared baking pan. Bake for 30 minutes. Leave to cool in tray on a rack. Then cut into 12-16 pieces.
