Ingredients
12 servings
For the dough"
¾ cupalmond milk
warm - 110F, unsweetened, original
½ Tbspunsalted butter
2 Tbspsugar
½ tspsalt
2 ¼ tspactive dry yeast
2 ¼ cupall-purpose flour
For the filling:
Instructions
Step 1
Lightly coat a 9”-round pan with nonstick cooking spray and set aside.
Step 2
Use a large bowl to mix together the butter, milk, sugar and salt. The yeast should be sprinkled on top. Let the mixture rest for 12-15 minutes, or until frothy. Add 1 ½ cups of flour to the bowl and keep mixing the dough manually. If it still looks a little wet, keep adding flour 1-2 tablespoons at a time. Once the dough pulls away from the sides of the bowl, you can stop adding flour.
Step 3
Sprinkle some flour in your work surface and place the dough on the floured surface. Knead for approximately 5 minutes, or until the dough springs back when you gently press a finger into it.
Step 4
To prepare the filling, stir together the sugar and cinnamon in a small bowl.
Step 5
Roll the dough out into a 16x10” rectangle and brush it with the melted butter, leaving a 1” border on the two longer sides. Sprinkle with the cinnamon sugar. Roll the dough into a log.
Step 6
Slice the log into 12 pieces using a sharp serrated knife or unflavored dental floss. Place the rolls into the prepared pan and cover it with a clean towel. Leave the pan in a warm dark place for 30-45 minutes.
Step 7
Preheat your oven to 350F while the dough is rising. After 45 minutes, the dough should have doubled in size. Bake the cinnamon rolls in an oven at 350F for about 20 minutes.
Step 8
If you wish to top the rolls with glaze, mix together 1/2 cup powdered sugar, 1/2 tsp vanilla, and 2 tsp of milk until smooth. Continue adding milk by the teaspoon until the glaze is the preferred consistency.
