Instructions
Step 1
Soak prawn crackers for 4 hours
Step 2
Boil prawn crackers in boiling water with 1 tbsp oil for 4-5 minutes. Ensure they do not stick to each other.
Minced prawns
Step 3
Boil 500ml water and 1/2 tsp salt. Add prawns with shells on and cook for 1-2 minutes.
Step 4
Take prawns out and remove shells. Keep the fish stock.
Step 5
Mince prawns until chunky sized in food processor.
Step 6
Heat 1 tbsp oil and smoked paprika. Stir fry minced prawns.

Sieve to get 500ml fish stock. Add nước mắm. 1/2 tbsp sugar. 2 smashed cloves of garlic and chopped green chilli pepper.
Glaze
Step 8
Heat 3 tbsp oil and fry gently 1 smashed clove of garlic
Step 9
Fry chopped green spring onions for 30 seconds.
Presentation
Step 10
Lay prawn crackers on plate. Glaze with spring onions oil, minced prawns, plenty of nước chấm and pork cracklings.
