Instructions
Step 1
Prepare and dice some ginger and garlic, slice green onion/Chinese leeks, ; Cut tofu into square cubes (2 cm across). Bring a large amount of water to a boil and add a pinch of salt in the water. Slide the tofu in and cook for 1 minute. Move out and drain.
Step 2
Heat up olive oil and stir fry ground beef in the pan when oil gets to the right temperature. Meanwhile, break beef up into small grains (you don't want clumps of meat) to cook until golden brown. Then add in minced garlic and ginger, Pi Xian bean paste, black bean paste, red chili powder in the beef to mix, stir for a few minutes on medium heat. Add in water to the sauce and bring broth to boil(just enough water to cover beef).
Step 3
Once broth starts boiling, simply season it with a small amount of salt, sugar, dark soy sauce and chicken powder. Put tofu cubes in and toss to mix, cook for a couple of minutes.
Step 4
Mix potato starch or corn starch with water (about 4½ tbsps of water), then pour it over the beef and tofu in three separate times. Toss to coat until sauce thickens. Finally, garnish with green onion and Szechuan peppercorn powder. Serve warm.
