Weeknight Spaghetti with Quick Pan Sauce

You can make spaghetti diner in under 30 minutes without resorting to a sugar and sodium packed store bought sauce.

Instructions
Step 1
In a large saucepan brown sausage if using, breaking it up as it browns. Drain off excess fat and add onions and garlic to the pan. Cook until onions are soft.
Step 2
Add tomatoes, oregano, salt and pepper. Simmer to thicken and reduce. Taste for seasoning and add salt & pepper if needed (can also add some crushed chili flakes or basil if desired)
Step 3
Bring a large pot of well salted water to a boil. Cook pasta according to package directions.
Step 4
Drain pasta, toss with sauce. Top with fresh parmesan
