Ingredients

2 tbs extra-virgin olive oil.
2 Tbsextra-virgin olive oil
4globe
large, red, beefsteak, or red heirloom tomatoes, chopped
2 tbs chopped fresh basil leaves
2 Tbsfresh basil leaves
chopped
1 tbs minced garlic
1 Tbsminced garlic
1/2 tsp salt

1/4 tsp freshly ground black pepper
¼ tspfreshly ground black pepper
8 ozwhole wheat durum semolina macaroni
cooked and drained according to the package instructions
1/2 c finely grated pecorino Romano (about 4 oz)
½ cpecorino Romano
finely grated

Instructions

Step 1
Warm the oil in a large saucepan set over medium heat. Add the tomatoes, basil, garlic, salt, and pepper. Cook, stirring often and crushing the tomatoes against the side of the saucepan with the back of a wooden spoon, until the tomatoes break down into a thickened sauce, about 15 minutes.
Step 2
Stir in the macaroni and cheese. Serve hot.

Step 3
For a more elegant presentation, place the cooked and drained pasta on a serving platter, then top with the sauce and the cheese.
