This was an improvised cake. While it is basically a yogurt cake, it is fluffy, light and delicious.

Instructions

Step 1
Preheat oven to 190C.
Step 2
Grease the cake mould and dust with flour (for bundt pan).
Step 3
In a bowl of a mixer (thermomix), place butter and yogurt, beat on low for about 1 minute.
Step 4
Mix the sugar and the lemon zest. Add to the butter and yogurt. Mix for 2/3 minutes. Scrape sides of the bowl.
Step 5
Add the eggs, one at a time, waiting for each egg to fully incorporate before adding the next.
Step 6
Scrap the sides and bottom of the bowl.
Step 7
In a medium bowl sift the flour, baking powder, baking soda, and add it to the eggs and butter mixture.
Step 8
Add the lemon juice.
Step 9
Pour batter into the greased pan and bake for 40/45 minutes or until a toothpick comes out clean from the center of the cake.
Step 10
Remove from the oven and allow the cake to cool before removing from the pan about 10-15 minutes.
Step 11
Add icing sugar on top of the cake and slices of lemons.
