½ cupold fashioned oats
¼ cupall-purpose flour
¼ cupbrown sugar

0.5 stickbutter
frozen, cut into 1/2' pieces

3 x 24.7 ozpitted sour cherries in syrup
jars, drained well
3 poundsfresh cherries
pitted
½ cupsugar
¼ cupbourbon
¼ cupcornstarch
2 tablespoonsfresh orange juice
1 tablespoonorange zest
finely grated

In a food processor, mix the oats, flour, brown sugar and butter together until well mixed and no lumps of sugar remain. (Crumble is best when butter is still cold, so make it just before use or chill until used.)

Preheat oven to 375°.

Prepare pie dough for a single crust pie and transfer to pie pan. Crimp the pie shell edges for a decorative look.

Combine sugar and cornstarch and mix well until no lumps remain.

Combine cherries, bourbon, orange juice and orange zest in a large bowl.

Add sugar and cornstarch mixture, and using a rubber spatula, gently mix until cherries are coated, and mixture is evenly distributed.

Pour cherries into pie crust and top evenly with crumble. Bake until pie crust and center of crumble are deep golden brown and juices from cherries are bubbling and look thickened, 60-75 minutes.

Let pie cool for at least 2 hours at room temperature to allow filling to set properly.
