Pepperoni and cherry pepper pizza

This is a very adaptable recipe. Bacon is great in place of pepperoni. You can swap out the ricotta for traditional mozzarella. A drizzle of honey would be amazing.

Instructions

Step 1
Preheat your oven (indoor or outdoor) at the hottest temperature youcan - if using a stone or steel, be sure to include it! Traditional ovens need about an hour to pre-heat, outdoor pizza ovens may need less.
Step 2
To make the pizza sauce - drain the tomatoes (discard or save the juice - whatever you like!) and then blitz it in a blender or food processor. Add a little olive oil and some salt and that's it! This can be made up to a week ahead of time
Step 3
If you're using bacon - cook the bacon in your favorite method and then break it into chunks (the size you'd like to eat - small or large).
Step 4
Stretch your pizza dough and spread 2-4 tablespoons of the tomato sauce. Add as much or little minced garlic as you like (I go heavy with a tablespoon) and spread it around the pie.
Step 5
Dollup ricotta all over the pizza - it should make little delicious mounds. Spread the bacon or perrproni and cherry peppers around evenly
Step 6
Spread the grated parmesan cheese on top
Step 7
Bake your pizza and when it comes out of the oven, add a handful of basil!
