Instructions
Step 1
Preheat oven to 400 degrees F.

02 Prep the vegetables: Trim ends off green beans and cut broccoli into florets.

Halve cherry tomatoes.
Step 4
Toss all in a bowl with olive oil, salt and pepper

Spread in a single layer on a foil- lined baking sheet

Bake 10 minutes.
Step 7
03 Prep the salmon: Pat salmon dry and sprinkle with salt and pepper.
Step 8
Coarsely chop green onion and pistachios.
Step 9
Combine mustard and green onion in a small bowl and spread evenly on fish.
Step 10
Sprinkle pistachios on top and pat gently to stick.
Step 11
04 When veggies have baked 10 minutes, remove pan from oven; push veggies to one side of the pan and add salmon to the other.
Step 12
Return pan to the oven until cooked through, about 10 to 15 minutes more.
Step 13
Serve salmon over roasted veggies, seasoned with lemon juice, salt and pepper to taste.
