Ingredients
6 servings
6spring roll wrappers
12shrimp
medium, cooked
1 cupleaf lettuce
⅓ cupcilantro
½ cupcucumber
peeled, seeded, chopped
1red bell pepper
medium, thinly sliced
⅓ cupmint leaves
1carrot
shredded
1/2 cup water
Instructions
Step 1
In a bowl of cool water, soak a wrapper until limp.
Step 2
Lay wrapper out flat. Place 1/6 of each ingredient down middle of wrapper, starting with lettuce.
Step 3
Fold over each end and tightly roll the wrapper around the contents, as if making a burrito.
Step 4
Moisten at seam, press to close.
For the sauce
Step 5
In a small saucepan, combine the sugar and water.
Step 6
Bring to a boil, reduce heat, and simmer for 10 minutes until sugar is dissolved.
Step 7
Remove from heat and add the red wine vinegar, fish sauce, and red chili peppers. Mix well.
Step 8
Pour sauce on serving bowl, chill, and top with carrots and peanuts just before serving.
