Creamy Cheesy Spinach Artichoke Dip This recipe is really forgiving. You can easily double or triple the recipe, and it still comes out delicious. I recently accidentally added an extra 1/4 mayo when tripling the recipe, and it came out perfectly fine as always.

Ingredients

8 servings

1 x 14 ozcan artichoke hearts
in brine only, drained and chopped
10 oz. fresh spinach
10 ozfresh spinach
¾ cup grated Parmesan cheese
¾ cupgrated parmesan cheese
3/4 cup mayo
¾ cupmayo
1/2 cup shredded mozzarella
½ cupshredded mozzarella
1 tsp minced garlic, fresh is best
1 tspgarlic
minced, fresh is best
½ tspred pepper flakes
Optional, add more if you like it extra spicy
Tortilla chips
or pita bread, or veggies

Instructions

Step 1
Take stems off fresh spinach leaves. Steam spinach until wilted. Drain and chop into small-ish pieces.
Step 2
Chop artichoke hearts into smaller pieces, removing any sharp thorns, or hard petals.
Step 3
Mix all ingredients together into one bowl, then either spoon into one bigger baking pan, or into smaller individual ramekins.
Step 4
Cook at 350... Cook time for one larger pan, 9X9, or 9X13 is 20 minutes. It is only about 10 minutes for smaller ramekins, because the goal is to melt the cheese, and heat it through.
Step 5
Serve with tortilla chips, pita bread, toasted french bread, veggies, etc.
