Peanut Butter & Chocolate Covered Dates
These peanut butter stuffed dates that are coated in chocolate are reminiscent of those peanut butter eggs I grew up eating, but don’t leave me with a giant stomach afterwards!
And a bonus is, dates are full of fiber & antioxidants, and by pairing them with a bit of peanut butter, helps make them a balanced treat of fiber & healthy fats! You can sub any nut butter of your choosing as well.

Step 1
In a microwave safe bowl, melt the dairy free chocolate chips, I got mine from Trader Joe's, and 1 tbs of coconut oil. I like to heat it in intervals of 20 seconds, stir and continue until it's all melted.
Step 2
Peel apart your pitted dates, or slice and remove the pit yourself.
Step 3
Scoop in your peanut butter and roll in your melted chocolate.
Step 4
Place on parchment paper and freeze for 1hr.
Step 5
Remove from freezer and store in the fridge!
