Instructions

Step 1
Heat a frying pan on a medium heat and add a few sprays of fry light/oil.

Add the chicken, salt, pepper (to taste) and thyme and cook the chicken for around 10 minutes until golden and cooked through.

Add the lemon juice, vegetable stock and capers and bring to a simmer.

Step 4
Place a lid on the pan, and simmer for around 10 minutes until the liquid has reduced.

Whilst the chicken is cooking, cook the rice and broccoli according to packet instructions.

Step 6
Serve the rice, and add the chicken and sauce on top. Add a sprinkling of fresh parsley on top and serve with broccoli on the side. Also nice with hot sauce.
